shrimp pad thai is my fave

I was craving pad thai yesterday like crazy, but didn’t want to go to out and pay for something I was pretty sure I could make at home. I found this recipe on one of my favorite recipe blogs MMMCafe. She posts super simple recipes that never fail to be delicious. Her husband is way pickier than mine, but about as picky as I am, so it’s perfect! I added shrimp (and made a couple of other slight changes) to her recipe and it came out, oh so good — slightly spicy and peanut buttery.

Ingredients

1/2 c. chicken broth
3 Tbsp. creamy peanut butter
3/4 Tsp. red curry paste
1 1/2 Tbs. honey
3 Tbs. soy sauce
2 Dashes powdered ginger
1 1/2 Tbsp. minced garlic, divided
2 Packages ramen noodles
1 Tbsp. vegetable oil
1/2 – 1 lb. shrimp
Chopped cilantro, topping
1 – 2 Tsp. lime juice
Chopped peanuts, topping
Bean sprouts, topping (optional)

Directions

Cook noodles in salted water. In the meantime, saute shrimp in vegetable oil and 1/2 Tbsp. garlic. In small saucepan, combine chicken broth, peanut butter, chili sauce, honey, soy sauce, ginger, and 1 tbsp. garlic over medium-low heat. Whisk until smooth and remove from heat. Toss cooked noodles with sauce and shrimp. Sprinkle with cilantro, chopped peanuts, and bean sprouts. Before eating, squeeze lime juice over noodles and stir to combine. YUM!
